2.8. Grain
The grain is the ripened overy with the lemma and palea. The rice hull includes the lemma and palea and thier associated structures such as the sterile lemmas, rachilla, and the awn. The dehulled rice grain is called brown rice due to its brownish pericarp.The pericaro which is fibrous and has varied thickness, envelopes the caryopsis. The aleurone layer, which encloses the endosperm, lies beneath the tegmen layers. The embryo contains the embryonic leaves(plumule) and the embryonic primary root ( radicle). The endosperm provides nourishment to the germinating embryo. The endosperm could either be waxy or non-waxy. Glutinous or waxy rices are sticky when cooked. Low amylose rices tend to stick together somewhat and high amylose rices cook dry and fluffy. In the non- waxy varieties, chalky white spots often appear in the starchy endosperm.
