Rice is abundant in energy and is a good material of protein. Rice provides over 20% of global human per capita energy and about 15% of global human per capita protein. Moreover, the protein content of milled rice (over 5%) is higher than that of human mother's milk (1.1%) and that of cow's milk (2.9%).

   The content of Lysine, the first limiting essential amino acid in cereal proteins, is highest in rice among most cereal proteins. Rice has the highest protein digestibility among several cereal proteins.

   Besides, rice contains a reasonable amount of thiamine, riboflavin, niacin, vitamin E, etc. Rice is also the principal source of iron and calcium in rice diets.
